Coat thoroughly in the panko-cornstarch mixture, pressing gently to adhere. Fry the chicken: Heat about 2 inches of vegetable oil in a deep pan over medium-high heat (350°F/175°C). Fry the chicken in batches for 3-4 minutes per side, until golden brown and crispy. Drain on a paper towel-lined plate. Make the sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Coat the chicken: Toss the crispy chicken pieces in the bang bang sauce until evenly coated. Serve and garnish: Plate the chicken and sprinkle with sliced green onions and sesame seeds.
