In my experience, with pizza crust on the steel, the parchment paper is less about it sticking to the steel and more about an easier launch from your paddle.

I love open baking! My husband made me a baking steel. It was a little intimidating, but the first loaf was awesome! iI do put a smaller pan on the bottom rack. When I put my loaves in, I add hot water to the smaller pan to create the steam. Hate I waited so long to try it! It's life changing timewise...

Great for the first one! Just need some steam ❤️I use a pan with lava rocks and heat them up while I heat the baking steel at 500 for an hour and then I add water to the lava rocks and add the bread cool half the time with the steam remove steam and then bake the other half of time

You need to steam the oven with a pan of lava rocks for the first 20 minutes. Wait until you try pizza on that steel! 🤤
