Shepherd’s Pie is one of those dishes that feels like comfort food in every country. And I think it fits Egyptian taste buds perfectly. Meat, vegetables, potatoes... everything in one dish. No sides needed, no complicated techniques — just a proper meal that delivers every time. Steps: Cook the potatoes: Peel and cut potatoes into equal-sized cubes. Place them in salted water (start with room temperature). Bring to a boil and cook for about 20–25 mins until completely tender. Cook the filling: While potatoes cook, heat a pan over high heat. Add the minced beef to hot oil, season with salt and pepper, and cook until deeply browned. Add diced onion and cook until softened. Add carrots and cook for another few minutes. Add minced garlic and tomato paste and cook for 1–2 minutes until fragrant. Pour in stock (or water) and mix well. Finally add frozen peas and simmer gently for about not more than 10 mins. You want the vegetables cooked but still holding their shape — not mushy. Make the mash: Drain the potatoes and mash until smooth. Add butter and milk (or cream) and mix well. Off heat, add cheddar and parmesan. Finally add egg yolks and mix until fully incorporated. The egg yolks make the mash richer, creamier, and give it a beautiful color. They won't taste eggy, and they'll fully cook in the oven. Assemble: In an oven-safe dish, spread the beef mixture evenly. Cover completely with the mashed potatoes, making sure the meat is sealed underneath. Use a fork to create ridges and patterns on top — this helps create more crispy edges and better color. Finish with extra parmesan. Bake: Bake at 180°C for about 25 mins. If needed, finish under the grill until golden brown and crispy on top. Serve: Let it rest for 10 mins before serving. That's it. One dish, complete meal. Ingredients (Serves 4–6): Filling: * 500g minced beef * 1 large onion, diced * 2 medium carrots, peeled and small diced * 2 garlic cloves, minced * 2 tbsp tomato paste * ½ cup frozen peas * 1 cup chicken stock (or water) * Salt & pepper to taste Mash: * 1kg potatoes, peeled and cubed * 3 tbsp butter * ¼ cup milk or cream * 1/2 cup grated cheddar cheese * ¼ cup grated parmesan cheese * 2 egg yolks * Salt to taste iven pot I used in this recipe is from @Stonia Really solid quality, oven-safe, and perfect for dishes like this. use code:
