MY GO TO EASY LUNCH: CHOPPED EGG SALAD This is as easy as it gets, and so good every time. I always feel like egg salads dont get the appreciation they deserve… its such an easy meal option, delivers the protein, and best of all, keeps you full all afternoon. This makes 2 servings, but feel free to make more for more meals throughout the week. If you dont want lettuce as your base, you can always use bell peppers, or your favorite bread… sour dough or a warm pita would be amazing. I had this, plus the blue raspberry electrolytes from @Waterboy and it was perfect. Here is how I made it: 1.Feel free to chip this up on a cutting board or grab a bowl and mash it, your move. 2.Cut a medium sized avocado in half and add half of it and save the rest for something else. 3.Make your eggs. I used 6 eggs here. I just remove them from the fridge, drop them in boiling water for 8.5-9 mins, dunk them in an ice bath for a few seconds to stop the cooking, and just peel and cut them in half. Add them to the board. 4.Add 2 green onions (both the white and green), half a small shallot, a solid handful of fresh dill, some pickle slices, 1.5 tbsp greek yogurt, 1 tbsp mayo, 1 tbs dijon mustard (German is best here), 1 tsp onion powder, some chili flakes, and a generous pinch of salt and pepper. 5. Chop everything up. Now, if you want it chunkier, chop a little less, but if you want it creamy and well incorporated, chop a bit more. Give it a taste and adjust.
