Riz Gras – Burkina Faso 🇧🇫 – Around the World – Episode 27 I’m attempting to cook a dish from EVERY single country in the world in alphabetical order. Today, we’re in Burkina Faso making Riz Gras – a rich, tomato-based rice dish full of depth. Ingredients (Serves 4): 500g long grain rice, washed 9 skinless chicken thighs 1 onion (for blending) 5 garlic cloves 5 large tomatoes 1 scotch bonnet (deseeded if preferred) 2 tbsp tomato purée 3 Maggie stock cubes 500ml hot water ½ cup vegetable oil Salt and black pepper, to season 1 onion, thinly sliced into rings (for garnish) Method: Blend the onion, garlic, tomatoes, and scotch bonnet until smooth. Heat the vegetable oil over medium heat. Pour in the blended tomato mixture and fry for 10–15 minutes until reduced, darkened in colour, and the oil begins to separate. Stir in the tomato purée and cook for a few more minutes until thick and rich. Pour a little water into the blender to collect the residue, give it a quick blend, and pour this into a large pot. Add the chicken thighs, season with salt and pepper, and simmer gently until the chicken is fully cooked through. Add the cooked chicken to the sauce and stir through. Dissolve the Maggie cubes in 500ml hot water and pour this into the pan. Let it simmer for 10 minutes so the flavours come together. Stir in the washed rice, ensuring it’s evenly coated and submerged in the liquid. Nestle the chicken back on top, cover with a lid, reduce the heat to low, and cook for 20–25 minutes until the rice is tender and all the liquid has been absorbed.
