@blackskullsreaper: Grilled Paidakia A staple in Greek tavernas, these succulent chops are traditionally marinated overnight, then grilled quickly over hot coals, arranged on a large platter and drizzled with fresh lemon juice just before serving. Ingredients: 2 racks of lamb, cut into single chops 1/3 cup extra-virgin olive oil Zest of 2 lemons (before zesting, scrub the lemon with a vegetable brush under cool water) 8 cloves garlic, minced 1 tablespoon dried oregano 2 tablespoons fresh rosemary or 1 tablespoon dried rosemary 2 teaspoons Kosher salt 1 teaspoon freshly-ground black pepper For serving: The juice of the two zested lemons. After zesting the lemons for the marinade, leave them whole, then slice in half and squeeze over cooked chops just before serving. I prefer using the zest in the marinade which has provides lemony flavor without the citric acid in the juice, which can make the meat mushy if left on too long. Adding the juice at the end brings bright flavor without breaking down the protein. Directions: In a small bowl, mix the olive oil, lemon zest, garlic, oregano, rosemary, salt and pepper, mashing the herbs with the back of a teaspoon to release the volatile oils. Place the chops in a Pyrex baking pan and pour the marinade over them. Toss, using clean hands to make sure the meat has been completely covered. Cover with plastic wrap and marinate the chops in the refrigerator for at least 2 hours or preferably overnight, turning the meat from time to time. Half an hour before cooking, take the chops out of the refrigerator remove from the marinade and place them in a shallow roasting pan, allowing them to rest and come to room temperature. While the chops are resting, preheat a gas grill to high. When ready to cook turn the heat down to medium high and depending on their thickness grill the chops 3-5 minutes per side for medium rare, basting with the remaining marinade when they are turned. Transfer the chops to a warm serving platter, loosely cover with foil and rest for 5 minutes. Drizzle with fresh lemon juice and serve. Serve 4-6
