With crispy pancetta forming the nest, creamy egg and cream filling, mozzarella on top, and fresh basil for that Italian touch, these little bites are perfect for any time of the day. Ingredients (makes about 6 nests): • 6 eggs • 20 strips pancetta or bacon • 150ml cooking cream • 25–30g Parmigiano Reggiano • Fresh basil • Pinch of salt & black pepper • Mozzarella (to finish) Instructions: Whisk eggs, cream, salt, pepper, Parmigiano, and basil. Cut pancetta into strips and line a muffin tray to form nests. Pour egg mix into each nest, top with mozzarella. Bake at 170°C for 10–12 minutes. Let cool slightly and enjoy warm.
