Sourdough tips episode 3: how to bake your sourdough on a baking steel A few more details: 1. I preheat the oven with the steel on the second rack from the bottom at 240C for 1 hour and when I load my bread in, I turn the oven down to 225C. Thats because my current oven has a very good seal and holds the temperature very well. My previous oven had a terrible seal so I would preheat at 250C and bake at that temperature too. If you bake your bread at too high of a temp, the outside will seal befor it has a chance to tear. 2. I used to use two dishes filled with boiling water. Again that was in an oven without a good seal so test out what works for you 3. You dont have to use ice for extra steam. You can also spritz the dough with water before loading it into the oven, or you can spritz water in after the first 5 minutes 4. I check my bread reaches 97C internally for doneness. You can let it sit longer than this for darker or thicker crusts. 5. I always let my dough cool for at least 2 hours before slicing into it so that the interior has time to set 6.
