In response to the love you guys showed for my viral chickpea tofu video, I am showing you a slightly different whole food plant based, soy free, legume tofu with a firm texture, made from soaked brown lentils. 
‌ Lentil Tofu Recipe Ingredients - 1 cup brown lentils (soaked 8hrs or overnight) - 2 cups water - 1 tsp salt - 2 tsp mushroom powder - 1 garlic clove - 1 tsp vegan” beef” bullion (optional) - 1/2 tsp monosodium glutamate (optional) Method 1. Cover dried lentils with several inches of water and soak overnight (at least 8 hrs) 2. Rinse and drain soaked lentils, place all ingredients into a blender and blend on high for 2 - 3 mins. 3. Pour mixture into a saucepan bring to a simmer. Reduce the heat to medium and continuously whisk over the heat until the mixture becomes really thick to avoid lumps and the bottom burning. The consistency should be like thick refried beans. This should take anywhere from 5-10 minutes depending on your burner. Undercooking will result in it not becoming firm. 4. Pour immediately into a baking dish, and press down with plastic wrap or parchment to make smooth. Then leave to cool at room temperature for at least 1 hour. Transfer to chill in the fridge to firm up even more (I usually let it chill for several more hours before cutting) Cut into whatever size and shape you like. This will depend on how you are going to use it. I cut it into very thin strips. Store in an airtight container in the fridge. 5. I like to pan fried it and add to tacos, sandwiches, or a meat replacement for shawarma in a pita with all the fixings.
