This chocolate mousse is one of those desserts that looks fancy but comes together so quickly. Honestly… once you make it at home, you’ll never bother buying it again. It’s light, silky, and you can use any chocolate you love — even Toblerone works beautifully. Full recipe below. Ingredients 250 grams good quality dark chocolate 4 large eggs, separated 3⁄4 cup white sugar 1 teaspoon vanilla essence 1⁄4 teaspoon salt 300 ml thickened cream + extra for topping if using 2 tablespoons icing sugar Pistachios, for garnish Extra chocolate shavings, for garnish Break or cut the chocolate into small pieces and melt it over simmering water, then let it cool slightly. Beat the egg whites with the salt, gradually adding the sugar until glossy, stiff peaks form. In another bowl, beat the egg yolks with the vanilla until pale. Add the cooled chocolate to the yolks and mix by hand. Gently fold the stiff egg whites into the chocolate mixture in 3–4 additions. Using the same bowl, beat the thickened cream with the icing sugar until soft peaks form, then fold it through the mousse. Spoon into glasses and refrigerate for at least 4-6 hours. Top with whipped cream, chocolate shavings and pistachios before serving. A Few Things You’ll Want to Know How to melt the chocolate: You can melt it over simmering water or in the microwave. If you use the microwave, heat it in short bursts and stir in between so it doesn’t burn. 👉🏽What chocolate works: Any chocolate you enjoy. Dark, milk, or even Toblerone — they all work beautifully as long as they melt smoothly. 👉🏽What “stiff peaks” means: When you lift the beaters, the egg whites should stand up firmly without collapsing. This step is key for a light, airy mousse. 👉🏽How gentle is gentle when folding: Take your time and use a soft hand.
