Smokey courgette (zucchini) dip 🥒🥒🥒 The courgettes are roasted to bring out their flavour, and the creaminess comes from a blend of olive oil, yogurt, and a touch of garlic and lemon. This dip is light, fresh, and perfect for serving with pita, crackers, or crudités. Blend until smooth and creamy. Taste and adjust seasoning as needed. Serve: Spoon the dip into a bowl. Drizzle with olive oil and sprinkle with chopped herbs and a pinch of smoked paprika or sumac if desired. Enjoy: Serve with warm pita, crackers, or fresh vegetables. Tips: - For extra smokiness, grill the courgettes instead of roasting.
