ZAALOUK 🍅🍆🇲🇦 welcome back to TAKE A DIP SEASON 3 - the series where I show you how to make the best dips in town 🤩 For EPISODE 10, the final episode, I’ve made my take on ZAALOUK from Morocco. It’s packed with charred summer veg, which brings a wonderful smokiness to the slightly sweet + savoury flavour profile 🔥 As always, my full written recipe can be found below - so enjoy! And let me know if you give it a go in the comments 👇 INGREDIENTS (serves 4-6) 400g large tomatoes 1 large aubergine 2 red peppers 4 garlic cloves, minced 1 tbsp smoked paprika 1 tbsp cumin 15g fresh parsley 3-4 tbsp water Salt, pepper + olive oil TO SERVE: Handful of pomegranate seeds, flatbreads, lemon METHOD 1. In a hot oven (250 degrees celsius) or grill, char all veg until skins are blackened. Allow to cool, then peel the skins + remove the seeds from the peppers. 2. Get into a large saucepan, then mash well to break down. Add the cumin, smoked paprika, garlic + cook for 2-3 mins, stirring well. Add the water, then allow to bubble away on a medium heat for 10-15 mins, or until reduced + thickened. Season to taste with salt + pepper. 3. To serve, spoon onto a plate. Top with pomegranate seeds, chopped parsley, a good drizzle of good olive oil + a squeeze of lemon juice if you like.
