Plum Flapjack 🌾  Plum filling: 1 kg whole plums 100g brown sugar 2 tsp cornflour Flapjack: 400g butter 400g brown sugar 800g Rolled oats 180g dark or white chocolate, melted First, make the plum filling. Remove the stones from the plums, then add them to a large saucepan and place over medium heat. Add the brown sugar and a splash of water to get it going. Simmer until the fruit is juicy and broken down into a chunky sauce. Mix the cornflour with 1 tsp cold water in a small bowl until smooth, then add this into the plum mixture and stir to combine. Reduce the heat to low and continue to simmer for about 30-40 mins or until the plum sauce is thick, similar to the consistency of jam. If it’s not quite thick enough, keep simmering.  Remove from the heat and set aside to cool. For the flapjack, add the butter to a saucepan over low heat until melted. Remove from the heat and stir in the sugar until combined. Add the oats to a large mixing bowl, then pour the butter and sugar mixture over the top. Stir with a wooden spoon to combine.  Grease and line a baking tray of approx. 20cm x 40cm. Spoon half of the oat flapjack mixture into the tray, then press it down with the back of a spoon, making a smooth base. Dollop in the cooled plum filling and smooth over, then pop in the fridge to chill for 30 mins. While it’s chilling, preheat the oven to 180ºC fan. Remove the tray from the fridge, add the rest of the oat flapjack mixture and smooth out the top with the back of a spoon again, then bake in the oven for 30 - 40 mins or until golden brown. Remove and allow to cool completely before removing from the tin and slicing into large squares, then dipping a corner of each square into your melted chocolate.  Leave the chocolate to set before you eat them… if you can wait that long! . . . .
