The one I’m aware of that springs to mind is Tobey Maguire in Spider-Man catching all the food on the tray in the lunchroom scene. While it was aided by little sticky bits on each item he did catch it all in one shot with very little movie magic involved. Also, from what I understand, that scene with John Candy he had been out drinking until the sun came up or something along those lines, he might not have been a method actor but he had his own method and approach to life and acting.

Alien: Resurrection. Sigourney Weaver was tasked with making a basketball shot from faaaar away behind her back. She practiced and got it down and insisted on doing it without VFX. After a long time of trying to get it down, she “gave up” and made the shot, causing Ron Perlman to break character with a huge grin.

I read somewhere that the night before John Candy had that shoot he met Jack Nicholson who kept buying him drinks and he got quite drunk. He told him he had to shoot the next day and Jack was basically like “Don’t worry about it.” Crazy huh!
