Roasted chicken & disinfecting my countertops inbetween each step 🫶 IYKYK  Ingredients * Whole chicken (about 5 lbs) * 1 head of garlic + 2 cloves * 1–2 onions * Potatoes (any kind) * Carrots * 1 Lemon * Olive oil * 1–2 sticks butter, softened * 1–2 cups chicken stock * Fresh herbs (I used rosemary, parsley, thyme for this one!)  * Salt, pepper, paprika (to taste) Prep the veggies * Chop potatoes, carrots, and part of an onion. * Toss in your baking dish with a splash of olive oil, salt, pepper, and a squeeze of lemon. Make the butter mix * In a bowl, mix softened butter with:     * Finely chopped parsley, rosemary, thyme     * Zest of a lemon     * 2 cloves minced garlic     * Salt, pepper, paprika * Set aside. Prep the chicken * Remove giblets, wash, and pat dry completely. * Place the chicken on top of the veggies. * Rub the butter mixture under the skin, inside the cavity, and all over the outside. * Stuff the cavity with chunks of onion, lemon, the garlic head cut in half (I dno why I just saw it in a video lol), and extra herbs. * Tie the legs with kitchen twine. * Add chicken stock to bottom of baking dish. 1 cup should do, unless it’s a massive bird lol  Roast * Roast at 400°F. * Baste every 20 minutes to keep juicy! * Cover with a lid/foil for the first  45 minutes-ish and then uncover so it gets that’s crispy layer on top. * Cook for 1.5–2 hours, until the chicken reaches 160°F.  * Remove from the oven and let it rest until it comes up to 165°F.
