She-Crab Soup Ingredients: 4 tablespoons unsalted butter 1 small onion, finely chopped 2 celery stalks, finely chopped 2 garlic cloves, minced 1/4 cup all-purpose flour 4 cups seafood stock or chicken stock 1 cup heavy cream 1 cup whole milk 1/4 cup dry sherry, plus more for serving 1 teaspoon Old Bay seasoning 1/2 teaspoon cayenne pepper (optional) Salt and pepper, to taste 1/2 pound lump crabmeat, checked for shells 2 tablespoons crab roe (optional, if available) Chopped fresh parsley for garnish Directions: In a large pot, melt the butter over medium heat. Add the onion, celery, and garlic. Cook until softened, about 5 minutes. Stir in the flour and cook for 2 minutes, stirring constantly to form a roux. Gradually add the seafood stock, stirring continuously to avoid lumps. Bring the mixture to a gentle simmer. Stir in the heavy cream, milk, dry sherry, Old Bay seasoning, cayenne pepper (if using), salt, and pepper. Let the soup simmer for 10 minutes, stirring occasionally. Add the crabmeat and crab roe (if using) to the soup. Simmer for an additional 5 minutes, being careful not to let the soup boil. Taste and adjust seasoning as needed.
