Brown butter caramel pumpkin espresso pumpkin pie with Maple whipped cream and brown sugar cinnamon streusel 😍  I took the milkbar recipe and made it even better - slightly less sweet and more balanced. It is worth every second put into it!!  Ingredients Pie Crust (9–9.5” pie) 1 1/2 cups (188g) all-purpose flour 12 Tbsp (170g) cold unsalted butter, cubed 1 Tbsp white sugar 1 tsp kosher salt 1 Tbsp apple cider vinegar 1/4–1/3 cup ice water Brown Butter Caramel 1 cup (200g) white sugar 1/4 cup (60g) water 6 Tbsp (85g) browned unsalted butter (→ start with 7 Tbsp / 98g butter before browning) 1/3 cup (80g) heavy cream, warm 2 Tbsp (35g) maple syrup 2 tsp vanilla extract 2 tsp kosher salt Espresso Pumpkin Ganache 2 cans (30oz / 850g) pumpkin puree (→ roast + reduce to 500g) 1 1/4 cups (277g) heavy cream 1/3 cup (110g) pure maple syrup 5 Tbsp (71g) unsalted butter 16 oz (443g) white chocolate, chopped 2 tsp cinnamon 1 tsp cardamom 1/2 tsp ginger Pinch clove 1/2 tsp kosher salt 1–2 Tbsp espresso powder (to taste I did 1.5tbsp) Streusel Topping 1/2 cup (63g) all-purpose flour 1/3 cup (73g) dark brown sugar 1/3 cup (28g) rolled oats 6 Tbsp (86g) unsalted butter, room temp 1 tsp cinnamon Pinch salt Maple Whipped Cream 1 1/4 cup heavy cream 1/3 c maple syrup 1 tsp vanilla Pinch salt Instructions 1. Mix flour, sugar, and salt. 	2.	to a food processor add the flour mixture and cubed cold butter and pulse until the texture is of coarse meal + blueberry-sized chunks. 	3.	mix vinegar and water together. Add 1 tbsp of the mixture at a time pulsing in between until dough holds when pressed. 	4.	fork into a disc and wrap tightly in plastic wrap. Chill 30 minutes. 	5.	Roll out, fit into pie dish, crimp edges. 	6.	Chill 20 minutes. 	7.	Blind bake at 350°F: 	•	30-40 min with weights 	•	remove weights, prick the bottom 	•	bake 15-20 min more until golden 	8.
