My motivation recently to cook has been next to 0 but I feel like it is coming back gradually so with some of that motivation yesterday I whipped up this amazing cheesy chicken fajita pasta…look at that cheese pull 😍 To make 2 portions of this you will need: 2 chicken breasts 150g pasta 2tsp smoked paprika 1tsp cumin 1tsp chilli powder 1tsp oregano 1tsp corriander 1tsp onion powder 1tsp garlic powder Pinch salt & pepper 3 garlic cloves minced 1 chicken stock pot 2tbsp @philadelphia_uki  2tbsp tomato puree 1/2 red onion diced 1/2 red pepper sliced 1/2 green pepper sliced 50g grated cheese 50g halloumi (optional but highly recommended) Flatten the chicken breasts until they are around 1cm thick. Mix all of the herbs & spices together then coat the chicken with half of it. Fry off the chicken on a high heat for a few mins either side to get it chargrilled then cook for another 5 mins on a medium heat until cooked through. You can also cook this in the airfryer for 15 mins at 190 Place the pasta on to boil as per the packet instructions. Remove the chicken from the pan then to the same one add in the onion & peppers with a drizzle of oil and fry off for 5 mins. Add in the garlic, stock pot and around 100ml of the pasta water then leave to simmer for a few mins. Add the rest of the herbs & spices, tomato puree and cream cheese mix until fully combined & bring to a simmer until the sauce starts to thicken up. If you are having halloumi with it fry this off at this point in small chunks. Add in the cooked pasta and the grated cheese, stir through until fully coated then top with the chicken and leave on the heat for another 5 mins to warm through.  Top with some fresh coriander & chilli flakes (optional) as well as the halloumi if you are using it and then enjoy….😋
