Korean Style Noodle Dumpling Soup – recipe below This rich and creamy noodle dumpling soup recipe is flavoured with some of my favourite Korean ingredients, gochujang paste and kimchi. Both add heat, spice and an umami hit to this simple noodle dumpling soup recipe. Enjoy x John Serves 2 2 tbsp Gochujang Paste – I use Sun Hee 1 x 400g tin coconut milk 800ml hot vegetable stock 2 tsp light soy sauce 1 tsp dark soy sauce 1 tbsp kimchi and some kimchi juice 6 frozen dumplings 200g cooked udon noodles – I use Itsu 2 boiled eggs, halved 2 handfuls of coriander leaves 2 handful of ready to eat beansprouts Black sesame seeds to serve Chilli oil to serve 1. Pop the Gochujang paste, coconut milk, stock, light soy, dark soy and a little kimchi juice if you like it spicy into a pan. Bring to the boil over a medium and whisk together. Reduce the heat a little, cover the pan and cook for 5 minutes so the flavours to develop. Check the seasoning, adding more soy to taste. 2. Pop the dumplings into the pan. Cover and cook for 5-6 minutes or until they are floating. Add the noodles and cook for 2-3 minutes until they have separated. 3. To serve, divide the noodles, dumplings and soup between two bowls. Top with the eggs, coriander, beansprout, black sesame seeds and chilli oil, and get slurping. #creatorsearchinsights #dumplings #noodlesoup #koreanfood
