Crockpot BBQ Chicken Bowls Weekday dinners don’t have to be boring and predictable, and these Crockpot BBQ Chicken Bowls are the exact opposite! From the saucy chicken over the rice, the cool avocado against the crunch of the light & perfectly tangy slaw, and the fresh green onion and pickle finish, everything in this bowl just goes. There are so many reasons why this one if of my favorite easy weeknight dinners!  For the crockpot chicken, prepare it your favorite way if you have one! If not, you can simply put chicken (patted completely dry & seasoned on both sides with salt, pepper, & garlic powder), bbq sauce, a couple dashes of Worcestershire sauce, and a nice drizzle of honey (use your heart here!). I typically go with about 1.5lbs of boneless/skinless chicken thighs, a heaping cup or so of bbq sauce, 3 or so generous dashes of Worcestershire, on low for about 6-7 hours/until the chicken falls apart, with the honey amount adjusted depending on the bbq sauce I go with - if it’s a spicier sauce, I’ll add more. You can also use chicken breasts if you prefer! You can prepare everything else in about 15-20 minutes before you’re ready to enjoy your dinner - and you could even prepare the coleslaw the day before or earlier in the day if you’d like to make this weeknight meal come together even more quickly! For the toppings you’ll need: - Cooked white rice (use microwaved if needed!) - Coleslaw (see recipe below, or buy pre-made!) - Thinly sliced avocado finished w/ salt - Sliced green onion  - Dill pickle chips  - Coleslaw Recipe: - 14oz bad a pre-shredded coleslaw mix from the bagged salad section  - 1/4 cup mayo of choice (even vegan, egg-free Mayo works! - 1/4 plain Greek yogurt (or do 1/2 cup of either if you want to use just one) - 1 Tbsp + 1 tsp Apple Cider Vinegar - 1 Tbsp honey - 1 tsp garlic powder - 1 tsp salt - 1/2 tsp pepper - (After mixing together, salt & pepper to taste) Build your bowl how you’d like, adding or omitting toppings as you prefer and enjoy.
