Here’s some additional information if you’re interested in learning more!: - Ban Kinsei—also written Pan Qinxing—was a Chinese immigrant who came to Kitakata at the age of 19, pushed a noodle cart while refining his recipe, then opened Genraiken in the mid-1920s. He was known for being open with his recipe, and sharing his style with 100+ students over time. - “Asa-ra” (morning ramen) is baked into daily life with many local shops opening around 7:00am. Typical asa-ra customers include workers finishing night shifts, farmers after morning chores, and families stopping into their local ramen shops before school or the office. There are even local groups in kitakata who play baseball early in the morning, eat ramen, and then head to work. - Many shops open around 7:00, and the practice picked up the nickname “asa-ra” after a JR East tourism push. City and regional guides put active ramen shops at roughly 100–120, with ~15–20 offering morning hours in any given year.
