Every Portuguese’s One-Pot Favourite 🇵🇹 POV: It’s a busy weekday, but you still want dinner that tastes like mãe’s kitchen. Heat olive oil in a large pot over medium-high heat. 	2.	Season chicken with salt and white pepper, brown on all sides, then remove and set aside. 	3.	In the same pot, sauté onion and garlic until soft. Add pimenta moída, paprika, and bay leaves. 	4.	Pour in the white wine and let it reduce slightly while scraping up the flavour bits. 	5.	Add diced tomatoes, chicken broth, peppers, and carrots. Return chicken to the pot. 	6.	Cover and simmer on medium-low for about 25 to 30 minutes, stirring occasionally. 	7.	Add spaghetti directly into the pot (break in half if needed). Stir gently and cook for another 10 to 12 minutes until pasta is tender and sauce thickens. If it starts to look dry, add more hot water or broth as needed so the pasta cooks evenly and stays saucy. 	8.	Finish with parsley and a drizzle of olive oil before serving.
