Now that’s it’s October, fall recipes are in full swing in my kitchen 🍂🎃 This apple cider braised pulled pork is the perfect easy meal to throw in in the crockpot while you work so you can come home to a delicious mean 🫶  RECIPE  -Pork shoulder (picnic shoulder) -2-3 leeks, sliced lengthwise  -1-2 honeycrisp apples, quartered  -1 shallot -2-3 cloves of garlic -2 cups apple cider -1-2 cups beef broth  -1 tbsp dijon mustard -salt -pepper -fresh thyme and rosemary  -olive oil  Pat your pork shoulder dry with paper towels. Generously season your pork shoulder with salt and pepper on all sides.  Heat a pan over medium heat or turn your instant pot to medium-high on the sear setting. Add in 1-2 tbsp of olive oil and let heat up. Once hot, add in the pork. Sear for 4-5 minutes on each side or until it has a golden brown crust. Once seared, remove from the pan/instant pop. Cut off the green tops of 1-2 leeks. Slice lengthwise and add to a strainer. Rinse under water to remove any dirt or sand from in between the layers. Next, quarter 1-2 honeycrispy apples and slice 1 shallot in half. Crush 2-3 cloves of garlic using the back of your knife.  To a crockpot or your instant pot, add in the leeks, apples, shallots, and garlic. Add in the apple cider, beef broth, dijon mustard, salt, pepper, and herbs. Stir together to incorporate the mustard with the braising liquid. Add in the seared pork shoulder. Cook on low heat for 6-8 hours or until the pork is tender.  Optional: once the pork is done cooking, remove it from the pot. Strain the braising liquid into a bowl to remove the vegetables and herbs. Add the strained liquid to a pan or back to your instant pot. Reduce the liquid over medium heat until it begins to thicken into a sauce.  Shred your pork and top with the reduced braising liquid.
