BELEKOY Ingredients: 2 cups glutinous rice flour 1 cup granulated sugar 1 cup water 1 teaspoon vanilla extract ½ cup toasted sesame seeds Procedure: 1. In a saucepan, combine sugar and water; bring to a boil until sugar dissolves completely to form a syrup. 2. Lower heat, gradually whisk in glutinous rice flour, stirring constantly to avoid lumps. 3. Add vanilla extract, continue stirring until mixture thickens into a sticky dough (about 10 minutes). 4. Pour the mixture onto a greased flat tray or pan, smooth it out evenly. While still warm, cut into rectangles or squares, then roll or sprinkle generously with toasted sesame seeds.
