✨RECIPE✨ Bicol Express is a classic Filipino 🇵🇭 dish that’s spicy, creamy, and so satisfying — especially with hot rice! 🍚 While this dish traditionally uses thick cut pork belly, thin sliced works just as great as it cooks much quicker! Bicol Express (serves 4-5) - 1 small diced red onion - 3 cloves minced garlic - 1 tbsp grated or minced ginger - 1.5 lbs pork belly sliced rolls - 1/2 tsp ground black pepper - 3 sliced Thai chilis - 1.5 tbsp bagoong (Filipino shrimp paste) - 2 cups long beans (or green beans) cut into 2 inch pieces - 1 - 13.5 oz can coconut milk - 1/2 - 13.5 oz can coconut cream - 1 tbsp (or to taste) fish sauce Directions: Heat oil in a wok or large pan to medium heat, add in the onion, garlic and ginger and stir fry until softened and fragrant. Next, add in the pork belly sliced rolls and cook until no longer pink. When all the moisture has evaporated and the pork begins to sizzle, remove most of the fat it’s released. Now add in the black pepper, chilis and stir in the bagoong (shrimp paste). Then put in the long beans and 1 can of coconut milk and mix well. Cover and simmer on medium low for 10 minutes. Lastly pour in 1/2 can of the coconut cream, stir, then season to taste with fish sauce. Serve with hot rice and enjoy! #bicolexpress #filipinofood #filipinorecipe #filipinofoodie
