@pancake.princess: Does cooling your chiffon cake upside down actually make a difference? Idk why I was skeptical but the answer is yes!!! This is the same chiffon cake batter (by @Adriana) baked in 2 identical, ungreased anodized aluminum pans. One was cooled upside down while the other was cooled right side up. You can see how flat the right side up cake cooled while the upside down cooled into a plump dome. The flat top is actually preferable when it comes to leveling cakes for layer cakes, but I think this difference would be even more important when it comes to baking chiffon cakes in angel food tins if you want the highest rise possible! #bakingtips #chiffoncake

what's the crumb structure inside like? you'll have to cut off the dome anyways to level it for decorating or stacking. is the texture inside overly dense in the one cooled right side up? or is it worth the work to cool it upside down and then level it off?
