Gur Wala Chawal (Sweet Jaggery Rice) Ingredients: - Desi Gur (Jaggery): 500g - Rice: 500g (Basmati or Sella) - Fennel Seeds (Saunf): 1 tbsp - Star Anise: 3 - Green Cardamom Pods: 5-6 - Ghee: as needed - Dry Milk Powder: 1 1/2 cup (optional, for added creaminess) - Nuts (your choice):   - Almonds: 2 tbsp   - Flaked Coconut: 2 tbsp   - Cashews: 2 tbsp   - Raisins: 2 tbsp Instructions:    - Soak the rice in water for 30 minutes to 1 hour.    - In a pot, bring water to a boil. Add the star anise and place the fennel seeds in a small muslin or net cloth for easy removal. If you prefer the fennel seeds mixed in the rice, you can skip the cloth and add them directly.    - Once the water is boiling, add the soaked rice and cook until almost done. Drain and set aside.    - In a pan, add jaggery along with ½ cup of water, 1 tbsp of ghee, and a few green cardamom pods.      - Heat over medium until the jaggery fully melts and becomes syrupy. Stir in the dry milk powder if using, for a richer, creamier flavor.    - In another pan, add a little ghee and lightly roast the almonds, cashews, and coconut until golden.
