the Gloucestershire Apple Cake 🍏 A true Cotswold classic, born from the old orchard traditions where apples went into cider, puddings, and hearty farm cakes. I’ve taken that history and given it a twist: warming ginger, nutmeg, cinnamon, a little lemon zest, and some delicious cider baked right into the sponge and the icing. The result? A wonderfully appley hit in every bite. Rustic, spiced, a little boozy... exactly the kind of cake that feels like the countryside on a plate. Would you serve it with cream, custard, or a tall glass of cider? Ingredients (serves 10–12) 250g self-raising flour @Matthews Cotswold Flour  1 tsp baking powder 1 tbsp ground cinnamon ½ tsp ground nutmeg 1 tsp ground ginger 175g light brown sugar 175g salted butter, softened 3 large eggs @St Ewe Free Range Eggs  Zest of 1 lemon 100ml cider @Hawkstone  300g medium eating apples, peeled, cored, and diced 70g sultanas  Pinch of salt  For the cider icing 150g icing sugar 2–3 tbsp Cider Zest of ½ lemon To garnish, glace chopped ginger  Method Preheat oven to 180°C (160°C fan). Grease and line a 20cm round cake tin. In a large bowl, beat butter and sugar until pale and fluffy. Whisk in eggs, one at a time. Fold in flour, baking powder, and spices. Add lemon zest and Hawkstone cider, mixing until smooth. Stir through diced apples and sultanas if using. Spoon into the tin, smooth the top, and bake for 45/ 50 minutes until golden and a skewer comes out clean. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack. For the icing, whisk together icing sugar, cider, and lemon zest until smooth and drizzly. Pour over the cooled cake. Top with the ginger f you like it.
