Cover the dough and let it rise for 1 hour, or until doubled in size. Meanwhile, mix the pistachio paste with the baked kadayif and pistachios until combined. Set aside. Lightly flour your work surface and roll out the dough into a rectangular sheet. Cut the dough with a pizza cutter into 18 pieces. Place the dough pieces on a baking tray lined with parchment paper. Let rise for 30 minutes, or until doubled in size. Heat a layer of sunflower oil in a frying pan to 175 °C. Fry the long donuts until golden brown on both sides. Drain on kitchen paper. Slice the donuts lengthwise. Pipe some pistachio paste inside and add some of the pistachio mixture. Close the donuts. Melt the milk chocolate using a double boiler and let cool slightly. Dip the donuts in the chocolate and place them on a sheet of parchment paper. Garnish with extra pistachios and, if desired, some lines of melted chocolate.
