Chocolate dipped peanut butter ice cream bars! They’re gluten free, dairy free, and refined sugar free, and sooo delicious.  Peanut Butter Ice Cream: •1 (13.5oz) can full fat canned coconut milk •1/2 cup natural peanut butter (or 1 cup peanuts) •1/2 cup pure maple syrup (or raw honey) •1 tsp pure vanilla extract •1/4 tsp salt (use 1/8 tsp if using salted peanut butter/peanuts) Chocolate Shell: •9oz dark or semi-sweet chocolate (I use dairy free & refined sugar free chocolate) •2 tbsp coconut oil Topping: •1/2 cup peanuts •3oz dark or semi-sweet chocolate (I use dairy free & refined sugar free chocolate) Instructions: 1. Add all of the ice cream ingredients to a high speed blender and blend until smooth. 2. Pour the ice cream mixture into 8-10 silicone popsicle molds and place in the freezer overnight, or for at least 8+ hours. They should be frozen solid.  3. Once the ice cream bars are frozen, finely dice some chocolate and peanuts for the topping. Next, melt the chocolate and coconut oil together for the chocolate shell (in the microwave or on the stovetop using the double boiler method). 4. Take the ice cream bars out of the freezer and remove from the molds (I find it helps to push them out of the molds from the bottom).  5. Coat each bar in melted chocolate then sprinkle with chopped chocolate and peanuts. Place the ice cream bars on a tray lined with parchment paper and place back in the freezer until the chocolate shell hardens. 6.
