With winter right around the corner, we still have an abundance of food growing in our vertical farm, and this is how we use freshly harvested crops for a quick and healthy recipe.  Ingredients: • 1 Kohlrabi • 1 Lettuce • 1 bunch of Scallions • 1 bunch of Cilantro • 1 to 2 Oranges • 80 ml (approximately 2/3 cup) Olive Oil • 80 ml (approximately 2/3 cup) Freshly Squeezed • • Orange Juice • 1 teaspoon Madras Curry Powder • Salt, to taste Optional: Cherry Tomatoes, finely chopped Optional: Cayenne Pepper, to taste Dressing: • In a small bowl, combine 80 ml of olive oil and 80 ml of freshly squeezed orange juice. • Add 1 teaspoon of Madras curry powder and salt to taste. • Whisk the mixture until it achieves a homogeneous texture. Salad Preparation: 1. Start by peeling the kohlrabi. Once peeled, use a spiralizer to transform it into spaghetti-like strands. 2. Finely chop both the cilantro and scallions. Prepare a bed of lettuce on each serving plate. Place the spiralized kohlrabi in the center on top of the lettuce. 3. Generously sprinkle the chopped scallions and cilantro over the whole plate. 4. Cut the oranges into small dices and use them to garnish the top of the kohlrabi. Assembling the Salad: Drizzle the curried citrus dressing over the salad just before serving. If desired, add finely chopped cherry tomatoes for an extra burst of flavor. For a spicy kick, incorporate a pinch of cayenne pepper into the dressing.
