 I use to buy granola at the store to add on top of my yogurt & smoothie bowls, but then I realized that it’s SO much healthier, cheaper, and tastier to make it yourself!  This high protein toasted coconut granola is so crunchy and delicious, and it’s so easy to make!  I add in my favorite @Promix Nutrition vanilla whey protein powder to make this granola high in protein, and it also makes it extra crispy and adds a delicious vanilla flavor! Ingredients: - 2 cups rolled oats - ½ cup unsweetened shredded coconut - ½ cup Promix vanilla whey protein powder (use code CLAIRE for 10% off!) - ¼ tsp salt - ¼ cup coconut oil - ¼ cup maple syrup or honey - 1 tbsp vanilla extract - ½ cup chopped cashews  How to: 1.
