I make it similar, but I do not do a roux. I mix three cheeses- Gouda, white Vermont, and sharp cheddar. When I bake it, I add some of the cheese mixture on top and then after that’s done I will crumb up Ritz crackers and push it down into the top and bake it for another five minutes. Everyone loves my mac & cheese.

I like to use egg yolks and cream or evaporated milk to make a custard to mix with a lot of cheese. A little American cheese helps too for the right texture. I think the egg whites make it seize up too much same as the roux, especially if any leftovers.

I’m a Mac & cheese snob. My fav ever is a duplicate from a restaurant I ate at on vacation. It’s so good, but not traditional of course. Easy to alter it to traditional though.
