day three: melting snowman cookie butter cookies ☃️ every year i make a melting snowman cookie, but the type of cookie differed from year to year. it started with kettle corn shortbread, which then made way for a hot chocolate cookie. this year, our little snowman is melting atop a cookie butter cookie. the cookie butter not only adds great flavour to the cookies, but also adds a fantastic chew and tenderness to each bite. (makes 12 cookies) 140 g (1/2 cup plus 2 tbsp) unsalted butter, room temp 126 g (1/2 cup plus 2 tbsp) brown sugar 100 g (1/2 cup) granulated sugar 1/4 cup cookie butter 1 large egg, room temp 1 tsp vanilla 200 g (1 2/3 cup) all-purpose flour 3/4 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt  preheat oven to 350f and line a baking sheet with parchment
 in the bowl of a mixer fitted with a paddle attachment, beat butter, sugars, and cookie butter together on medium speed until smooth, about 1 min

 in a large bowl, whisk together cereal flour, all-purpose flour, baking powder, baking soda and salt
 add the dry ingredients to the butter-sugar mixture and mix on low until just combined, about 30 – 45 sec
 using a standard ice cream scoop, portion out the dough into 12 dough balls
 place 6 dough balls on a baking sheet, leaving at least 2 inches between each dough ball.
 bake for 12 – 14 min, until edges are set but centres are still soft.  only decorate cookies once they’ve fully cooled royal icing 1 egg white 150 g icing sugar 1/4 tsp vanilla extract  1/2 tbsp cocoa powder  6 marshmallows, halved sprinkles, to garnish in the bowl of a stand mixer or large mixing bowl, beat egg whites on medium-low speed until frothy, about 1 min. with the mixer on low speed, add icing sugar and vanilla. once incorporated, increase speed to medium-high and beat until stiff peaks form. take a spoonful of royal icing and spread it on top of the cookie. attach half a marshmallow once white icing has dried, divide remaining icing into two bowls. add cocoa powder to one bowl, while leaving the other portion white. using the chocolate icing, pipe face and arm details. use white royal icing to attach a nose #christmasbaking #christmascookies #holidaybaking #holidaycookies #cookiedecorating
