There is still a such thing as bourbon chicken it’ll probably taste the same if you use bourbon or apple juice especially with that little amount of apple juice you put in there it would’ve made no difference

Bourbon chicken isn’t technically named Bourbon Chicken. It is Bourbon Street Chicken. That’s why it has bourbon in the name not because of the whiskey.
