I am not a huge fan of elderberry pie but by making a few slight changes to a traditional recipe, I think we’ve got a winner🙌 Elderberry Crumble Pie👇🏼 1 unbaked pie crust 4 cups elderberries 1 1/2 cups sugar 4 tbsp cornstarch 2 tbsp fresh lemon juice Crumble topping: 3/4 cup oats 3/4 cup flour 1/2 cup brown sugar 1/4 tsp baking soda 1/2 cup softened butter Prepare a pie crust and place in a pie tin. Set aside. Blend all of the elderberries in a blender to get them as fine as possible. Place in a medium pan and add in the sugar. Stir over medium heat until the sugar dissolves. In a small bowl, dissolve the corn starch in just enough water to make it smooth. Stir this into the berries until it thickens. Remove from heat and stir in the lemon juice. Pour into the prepared crust. Make the crumble topping by combining all the crumble ingredients with your hands. Add this to the top of your pie. Bake the pie at 350°F for one hour or until the filling is set and the top is slightly toasted. Let cool completely before serving.
