If i can make this here you can make this anywhere! 👀 Tonights Menu: Chicken Swiss Enchiladas Ingredients: (I made two batches) 1 rotisserie chicken 1 (4 oz) can chopped green chilies 2 (7 oz) salsa verde 1 (16 fl oz) Heavy whipping cream 4 cups shredded monterey jack cheese (I like A LOT) Corn Tortillas Salt Peper Oil for frying Directions: -Preheat oven to 350FIn a large bowl, shred the chicken from the whole rotisserie chicken then add in chiles and salsa verde. Mix and set aside. -Heat oil in a pan over medium-high heat. LIGHTLY fry each tortilla for about 5 seconds and place on a sheet pan with paper towels to drain some oil. (Very import not to over cook the tortillas) -In a bowl, add the heavy whipping cream and season with salt and pepper -To assemble, dip the tortilla into the heavy whipping cream until fully coated. Fill the tortilla with a pinch of the chicken mixture then roll. Place seam side down into a baking dish. -Once the dish is full, sprinkle cheese on top and add the remainder of the heavy cream mixture over the tortillas. -Bake in the over for 30-35 min and broil for 5 mins to brown the top. #cooking #Recipe #easydinner #cookwithme #enchiladas #nyc
