Never cut off both ends. Leave one end so the onion doesn’t fall apart while cutting it.

I was taught to leave the nappy root on so it holds the onion together as you chop it. Makes it much easier so the onion doesn’t slide around.

If it’s not going in a salad. The size and dice doesn’t matter. I’ve made 7 onion French onion soup. Shapes are a way of a chef slowing you down and wanting to see if you got the patience to handle the line. If you’re mad at onion shapes, you’re not gonna like the line.
