December 1st is the start of my favourite month, and with Christmas just weeks away, what better way to celebrate than with a Gingerbread Village Cake!🎄With layers of gingerbread sponge cake, vanilla buttercream, and lined with gingerbread houses, this cake is a showstopper that’s surprisingly easy to make and put together✨And did I mention it is DELISH! The full recipe is below⬇️ #gingerbread #gingerbreadhouse #cake #christmasrecipes #christmascake     (For the cake) 500g unsalted butter 400g light soft brown sugar 100g golden syrup Zest 1 large orange 8 large eggs 525g self raising flour 3 tbsp ground ginger (For the gingerbread houses I used a BBC GoodFood gingerbread house recipe) 250g unsalted butter 200g dark muscavado sugar 7 tbsp golden syrup 600g plain flour 2 tsp bicarbonate of soda 4 tsp ground ginger (For the buttercream) 500g unsalted butter 1000g icing sugar 2 tbsp milk (For the royal icing) 2 egg whites 500g icing sugar Method: 1. Preheat the oven to 160c and line 2 x 7 inch and 2 x 5 inch cake tins with parchment. In a large bow, beat the butter, sugar and golden syrup until light and fluffy. Add the orange zest, and beat the eggs in one at a time. Sift in the icing sugar and ginger and mix until combined. Divide equally between the tins and bake for 25 minutes and 35 minutes, respectively. 2. Whilst the cakes are baking, make the gingerbread. In a saucepan, melt the butter, sugar and golden syrup. In a large bowl, sift the flour, bicarb and ginger. Pour over the butter mixture and stir to combine. Whilst still warm, roll the dough out to 1/4 inch thick between two large pieces of baking paper and cut out house shapes. Increase the oven  to 180c and bake for 12 minutes.
