Pasta e Fagioli alla Napoletana | A Hearty Neapolitan Classic One of the most iconic comfort foods from Napoli — pasta e fagioli. Creamy borlotti beans, sweet tomatoes, and pasta mista come together in this humble yet flavour-packed dish. My Nonna made this often, especially in the cooler months, and every spoonful still brings me back home. Ingredients (for 2 pax): • 200g dry borlotti beans (soaked overnight) • 220g tubetti or pasta mista • 4 Roma tomatoes • ½ onion or shallot • 2 cups water • Olive oil, salt, pepper • Fresh parsley to finish Instructions: Soak beans overnight in cold water. Next day, drain and cook in a pot with fresh water for 40–50 min. Add salt only at the end. In a pan, sauté onion in olive oil. Add tomatoes, cook 3 min, remove skin, and mash with a fork. Add beans, cooking water, and pasta. Cook pasta until done, adding extra water if needed. Finish with parsley and black pepper. Serve hot.
