Nankhatai Recipe 🍪 📝 Ingredients: All-purpose flour (Maida) – 1 cup Besan (Gram flour) – 2 tbsp Sooji (Semolina) – 1 tbsp (optional, for texture) Powdered sugar – ½ cup Ghee (clarified butter) – ½ cup (solid/semi-solid) Baking powder – ¼ tsp Cardamom powder – ½ tsp Salt – a pinch Chopped nuts (almonds, pistachios) – for topping 👩🍳 Method: 1. Preheat oven to 160°C (320°F). 2. Mix dry ingredients: In a bowl, sift together maida, besan, sooji, baking powder, cardamom powder, and a pinch of salt. 3. Cream ghee and sugar: In another bowl, whisk ghee and powdered sugar until light and creamy. 4. Combine: Gradually add dry ingredients to the ghee-sugar mixture. Mix until it forms a soft dough. Do not knead too much. 5. Shape: Divide into small equal balls, flatten slightly, and place on a baking tray lined with parchment paper. 6. Top with nuts: Gently press chopped nuts on top of each cookie. 7. Bake: Bake for 15–18 minutes or until the edges are lightly golden. The cookies will still be soft; they firm up as they cool. 8. Cool completely before storing in an airtight container. 🍪 Tips: Ensure ghee is solid or semi-solid, not melted. Adjust sugar to taste. For extra flavor, you can add a pinch of saffron or rose essence.
