Preheat oven to 180°C. Line a 20cm square tin with parchment paper. 2. Make the pistachio paste: Blend pistachios until smooth, then add honey, coconut oil, and salt. Blend until thick and creamy. 3. Prepare kataifi: Toss shredded kataifi with melted butter and honey. Spread on a tray and bake for 8-10 minutes, stirring once, until golden and crisp. Leave to cool. 4. Make brownie base: Melt butter and 100g Afrikoa chocolate in a heatproof bowl over simmering water. Stir until smooth. Remove from heat and whisk in sugar. Beat in eggs one at a time, then stir in vanilla. Sift in flour, cocoa powder, and salt. Fold gently until just combined, then add chocolate chips. 5. Bake the base: Spread batter evenly into prepared tin. Bake for 20-22 minutes, until edges are set and centre is slightly soft. Cool completely in the tin. 6.
