@mollymcadam: Protein Pancakes 🥞
The easiest 18 grams protein, under-250-calorie pancakes — fluffy, filling, and perfect for a quick balanced breakfast or snack. Ingredients: (6 pancakes)
• 4 tbsp cottage cheese • 2 tbsp plain flour • 4 tbsp oats • 1 tsp baking powder • 2 eggs (add 2 extra egg whites for more protein) • Zest of 1 lemon (optional) • Sweetener of choice (vanilla drops or stevia work well) Instructions: 1. Mix all ingredients together (blend if you don’t want cottage cheese chunks). 2. Let batter sit for 5 minutes to firm up. 3. Heat a pan on low and spoon 1 heaping tbsp of batter per pancake. 4. Spread into pancake shape and cook until golden. 5. Repeat until you have 3 pancakes. Serving Ideas:
