CRISPY RICE VEGGIE CUPS Got some leftover rice? Give it a delicious makeover. These cups are crunchy on the outside, soft and flavorful inside with an extra boost of plant-based protein. Perfect as a healthy snack, appetiser or light lunch idea. Recipe inspired by @seriousfoodfetish Save the recipe below take a friend and let me know in the comments if you’re going to make it🙌 Ingredients: For the rice base: 2 cups cooked sushi rice (or jasmine rice) 1 tbsp rice vinegar 1 tsp sesame oil Pinch of salt For the filling: 1 cup cooked on canned chickpeas 1 tbsp soy sauce (or tamari for gluten-free) 1 tsp sesame oil 1 tbsp maple syrup (optional) 1 tsp rice vinegar or lime juice ½ tsp garlic powder (optional) 1 tbsp chopped green onion 1 tbsp sesame seeds To serve (optional but delicious): Sliced avocado Edamame Cucumber ribbons or grated carrot Extra sesame seeds Drizzle of sriracha Method: Preheat oven: to 180°C (350°F). Grease or line a muffin tray. Mix cooked rice with rice vinegar, sesame oil and salt. Spoon the rice into the muffin tray, pressing it firmly into the bottom and up the sides to form small “cups.” Bake for 10–12 minutes, until slightly golden and crisp on the edges. In a bowl, mix chickpeas with soy sauce, sesame oil, maple syrup, rice vinegar, garlic powder, green onion and sesame seeds. Spoon the filling into each rice cup. Optionally, bake for another 5 minutes to warm through. Add sliced avocado, edamame, cucumber, or drizzle with sriracha. Serve warm or at room temp.
