Jar size: 32 oz • 1/2 cup onion, chopped • 5–6 garlic cloves, smashed • 1/2 cup fresh ginger root, sliced • 2 tablespoons horseradish paste • 1 small lemon, sliced with peel • 1 tablespoon fresh turmeric root sliced or 1 teaspoon ground turmeric • 1–2 dried chile de árbol peppers or 1/2 teaspoon cayenne flakes • 1 small fresh rosemary sprig (optional) • 1/2–1 teaspoon dGreek oregano (optional) • 1/2 teaspoon mustard seeds (optional) • 1/2 teaspoon black peppercorns (for absorption) • 1–2 whole cloves (optional) • 1 small cinnamon stick, about 2 inches (optional) • 2–3 fresh parsley sprigs, chopped (optional) • 1 small fresh sage leaf (optional) • 1 small mugwort leaf (optional, adds liver and digestive support, optional) FERMENT BASE (BRINE) • 2.5 cups filtered water (non-chlorinated) • 1 tablespoon plus 1 teaspoon fine sea salt (about 2% brine) AFTER FERMENT • 1–2 tablespoons raw honey (optional, added after straining and cooling) INSTRUCTIONS • Dissolve salt completely in the filtered water to make the brine. • Pack the jar with chopped vegetables, roots, herbs, and spices. • Pour the brine over the contents, leaving 1 inch of headspace at the top. • Use a fermentation weight or folded cabbage leaf to keep everything submerged. • Cover loosely with a lid or use a fermentation airlock. • Ferment at room temperature for 10–14 days. • Burp daily if not using an airlock to release gas buildup. • Taste after day 7. It should be tangy, garlicky, spicy, and aromatic. • When the flavor is right, strain through cheesecloth. • Stir in honey if desired, while the liquid is cool. • Bottle and refrigerate. Keeps for 3–4 months and may continue to develop flavor. HOW TO USE • Daily immune tonic: 1 tablespoon each morning, straight or in warm water • Cold or flu onset: 1 tablespoon every 3–4 hours with lemon or honey • Digestive aid: 1 tablespoon before meals • Metabolism boost: 1 tablespoon in warm water or before workouts TIPS • Keep all solids below the brine to prevent mold. • Thin white film (kahm yeast) is harmless; skim it off. • Fuzzy mold (pink, blue, or black) means discard and restart. • Strained solids can be chopped and mixed with honey or oil for a spicy relish. #FireCider #KitchenWitch #WitchTok #witchcraft #TheWitchWithin
