I guess I still prefer honey cake, but this was good too. ☺️        Honey Roll 🍯 Ingredients: For the sponge: 	•	160g honey 	•	60g butter 	•	3 eggs 	•	70g sugar 	•	A pinch of salt 	•	1 tsp baking soda (level, not heaped) 	•	200g all-purpose flour For the cream: 	•	250g sour cream 	•	60g powdered sugar 	•	200g heavy cream (cold) ⸻ Instructions: 1. Prepare the honey mixture: In a small saucepan, melt the honey and butter together over medium heat. Add baking soda and stir — the mixture will foam and lighten in color. Remove from heat and let it cool slightly. 2. Whip the eggs: In a large bowl, beat the eggs, sugar, and salt until light and fluffy (3–5 minutes). 3. Combine wet ingredients: Slowly pour the warm (not hot) honey mixture into the eggs while mixing on low speed. 4. Add the flour: Sift in the flour and gently fold until smooth and well combined. 5. Bake: Line a baking tray (approx. 30×40 cm) with parchment paper. Spread the batter evenly and bake in a preheated oven at 180°C (top/bottom heat) for 8–10 minutes, or until golden and springy to the touch. 6. Roll the sponge: While still warm, flip the sponge onto a clean towel or parchment paper, peel off the bottom paper, and gently roll it up from the short side. Let it cool rolled, so it keeps the shape. ⸻ Prepare the cream: 7. Whip the cream: In a chilled bowl, whip the heavy cream with powdered sugar until medium peaks form. Add sour cream.
