Heres the real secret: add some salt. Then add more. Then add some more until you think, surely this HAS to be enough. Then add a pinch more. And then throw in your dairy products of choice

Best trick? Warm the butter and milk/heavy whipping cream before adding the potatoes because the starch will seize up and be less creamy
