as a food safety alumni,it is probably egg yolk encapsulated in gelatin so it last longer on the shelf as exposed egg yolk spoil within hours.

It is an egg but made of gelatin oil and egg. Not a fresh soft boiled egg, just a processed soft boiled egg. Still egg. Same like McDonald egg, a lot worse

they're made from processed and pasteurized eggs... they are real eggs they just have been treated in a way that keep them runny when heated instead of solidifying like a normal egg yolk wood
