Tiramisu Crêpes Cake Roll ☕️🍫🥞 Tiramisu Cream Filling Ingredients: * 2 small egg yolks * 60 g granulated sugar * 200  g mascarpone cheese (room temperature) * 300 ml double cream * 1½ tsp vanilla extract * 1 tbsp coffee liqueur (optional) For topping  *  cocoa powder (for dusting) Instructions: 1. In a heatproof bowl over a Bain-Marie (double boiler), whisk the egg yolks and sugar until the mixture thickens, becomes pale, and the sugar is dissolved (about 4–5 minutes). Remove from heat. 2. whisk the cream and  mascarpone until stiff and fully incorporated. 3. Add the yolk mixed into the cream. Gently fold it in then add coffee liquor fold in together and set aside. Chocolate Crêpes Ingredients: * 4 large eggs * 1¾ cups cold milk * 1½ cups all-purpose flour * 1 tbsp cornflour (cornstarch) * ¼ cup unsweetened cocoa powder * 3 tbsp granulated sugar * ¼ tsp salt * 1 tsp vanilla extract * 3 tbsp salted butter, melted Instructions: 1. In a mixing bowl, whisk together eggs, milk, flour, cornflour, cocoa powder, sugar, salt, vanilla, and melted butter until smooth. Strain the batter to remove any lumps. Let rest for 15 minutes. 2. Preheat a non-stick crêpe pan over medium heat. Lightly grease if needed. 3. Pour about ⅓ cup of batter into the pan, swirling to coat evenly. 4. Cook for 1–2 minutes until the top looks dry, flip, and cook for another 15–30 seconds. 5. Transfer to a plate and repeat with remaining batter. You should get around 8-10 crêpes. Espresso Soak & Assembly Ingredients: * ½ cup freshly brewed espresso * 1 tbsp cocoa powder * 1 tbsp coffee liqueur * 1 packet of Morning Coffee biscuits or ladyfingers Espresso Soak Instructions: 1. Mix the espresso, cocoa powder, and coffee liqueur together in a shallow dish. Set aside. Assembly: Tiramisu Crêpe Roll 1. Lay the crêpes in a slightly overlapping line on a piece of parchment paper to form a large rectangle. 2. Spread half of the tiramisu cream evenly over the crêpes. 3. Briefly dip the biscuits or ladyfingers in the espresso soak (just a couple of seconds), then layer them over the cream. 4. Spread the remaining tiramisu cream over the biscuits. 5. Gently roll the entire structure into a log, using the parchment paper to help guide it. 6. Wrap the log tightly in parchment and then cling film. 7. Chill in the refrigerator for several hours or overnight to set. 8.
