Peri Chicken Garlic Folded Flatbreads 😮‍💨 Thin slices of peri chicken are piled onto a homemade garlic flatbread, with cheese, lettuce, tomato and perinaise. Mix together and set to one side.  💕Whilst the chicken marinades, in a bowl, mix together the self raising flour, greek yogurt and salt. Once most of it is clumped together, use your hands to mould into a ball. Then split into two. 💕Push out into a circular shape using your hands, then roll out further. 💕Next, add the chicken to a pan and cook for around 8 minutes until cooked through and remove from heat.  💕Heat a large pan and add each rolled out dough into the pan (I did these in two separate pans to speed it up). Pan fry for 8 minutes or so until golden.  💕Once golden, mix together the butter and garlic and blast for 15 seconds in the microwave. Brush over the bread and flip for 30 seconds. 💕Remove from heat, and add the cheese slices on one half along with the chicken and tomato. Fold the other half of the flatbread over. Leave over low heat for a couple of minutes until the cheese has melted.  💕Once the cheese has melted, remove and add the peri mayonnaise along with the shredded lettuce before serving.
